Drip trays and grease cups: empty and wash

Apply a thin coat of mineral oil or stainless protector to surfaces — it seals against moisture
Protect the cooking surface with a light oil film; it prevents rust through the damp season
Lubricate hinges and slides with a food-safe lubricant
Disconnect propane tanks and store them upright, outdoors, away from heat sources
Inspect hoses for cracks, brittleness, or kinks — replace if in doubt
Check fittings for leaks (soapy water test on connections)
Cap open gas lines if your island has natural gas plumbing
Note any issues to address before spring grilling season
Store grates, pizza stones, and tools indoors in a dry place if possible
Bring in propane tanks, covers, and small accessories
Empty and dry any water features connected to the island (sink lines)
Use a breathable grill cover that fits snugly — never a plastic tarp, which traps condensation
Ensure the island is completely dry before covering (moisture under the cover is worse than no cover)
Elevate the cover slightly at the top so water sheds, not pools
Schedule a spring check-up — burner inspection, gas system test, full clean
