A gas pizza oven is one of the lowest-maintenance outdoor cooking appliances you can own — provided you do a few small things consistently. Neglect them and you get the classic symptoms: sticking dough, uneven browning, weak flame, and rust that starts in the corners.
Let the oven cool completely. Never clean a hot deck.
Brush the stone or deck with a stiff brush to remove flour and charred bits. Don't use water on a hot stone, and avoid soap on a porous deck.
Wipe the exterior with a damp cloth, following the grain on brushed stainless steel.
Empty any crumb tray or catch area so grease and debris don't bake on.
Deep-clean the deck. Once cooled, scrape residue and brush thoroughly. For stubborn spots on a stone, a light abrasive pad used gently works better than soaking.
Inspect the burner. Check that burner ports aren't blocked. A flame that burns unevenly or looks yellow instead of blue usually means debris or a partially blocked port.
Check the hose and regulator. Look for cracking, stiffness, or rodent damage. Replace rather than repair if anything looks compromised.
Clean the door glass (if fitted) with a non-abrasive cleaner so you can actually read the thermometer and watch the bake.
Leak test the gas connection. A simple soapy-water test at the joints shows bubbles if gas is escaping.

Tighten fasteners. Heat cycles loosen bolts on legs, hinges, and handles over time.
Store smartly. A fitted cover and a dry, ventilated location make the biggest difference to how the oven looks next spring.
