A high-heat oven doesn't just bake pizza faster — it changes what the dough has to be. The recipe that works in a 500°F kitchen oven often produces a wet, pale disaster at 800°F. Here's what actually matters.
Higher heat means faster water evaporation. Too wet a dough at very high temperature gives you a crust that sets on the outside while the interior stays gummy.
Very high heat (Neapolitan range): moderate hydration, strong flour, thin stretch
Mid heat (contemporary, NY-style): 60–65% hydration is a comfortable working range
Lower heat (pan and thick styles): more hydration and a longer bake
Start conservative, then increase hydration as your launch and handling skills improve — not before.
Protein content determines how much structure the dough can build:
Strong bread flour / "00" pizza flour — the standard choice for high heat; strong enough to hold shape during a fast bake
All-purpose flour — workable at moderate heat, less forgiving in a very hot oven
Whole grain blends — add flavor but weaken the gluten network; blend rather than substitute
Time, not additives, builds flavor. Two practical approaches:
Same-day dough. A few hours of bulk fermentation at room temperature. Fine for weeknight pizza, lighter flavor, slightly less extensible.
Cold ferment (24–72 hours). Mix, rest briefly, then refrigerate. The result is more flavor, better extensibility, and a more blistered crust. Bring the dough to room temperature before stretching — cold dough fights back.
Combine flour, water, salt, and a small amount of yeast. No sugar required for a high-heat bake.
Rest, then fold. Short rests with a few stretch-and-fold cycles build strength without kneading forever.
Divide into balls early and let them relax — balled dough is easier to open later.
Stretch by hand, don't roll. Rolling crushes the gas structure you spent hours building.
Leave the rim alone. The cornicione (outer rim) puffs because it isn't degassed — protect it.
