Higher heat means faster water evaporation. Too wet a dough at very high temperature gives you a crust that sets on the outside while the interior stays gummy.

  • Very high heat (Neapolitan range): moderate hydration, strong flour, thin stretch

  • Mid heat (contemporary, NY-style): 60–65% hydration is a comfortable working range
